Asian Turkey Noodle Soup
Transform your leftover turkey into a delicious light soup with an Asian touch! The ginger and scallions add new flavors to the holiday season!
PREP: 10 minutes COOK: 35 minutes SERVE: 4-6
- 4 ounces cellophane (bean thread) noodles
- 4 cups turkey or chicken stock (see above recipe for Turkey Stock)
- 2 large cloves garlic, sliced thinly
- 1 2” piece of fresh ginger, peeled and finely grated
- 2 tablespoons light soy sauce
- 8 ounces Chinese cabbage, thinly sliced
- 2 cups shredded cooked turkey
- 3 scallions, thinly sliced1. Add hot water to cover until softened, about 20 minutes.
2. While noodles are softening, set unit to STOVETOP HIGH and add stock, garlic, ginger and soy sauce. Cover and bring to a simmer, approximately 20 minutes (cold stock will take longer). Simmer for 10 minutes.
3. Add Chinese cabbage and drained softened noodles and cook for 3 minutes. Add turkey and cook an additional 2 minutes until heated through.
4. Serve in soup bowls and top with scallions.
